One of the great gifts of the world is brunch, but the sad truth is that brunch can be a chore — you have to get yourself out of the house to get to brunch, then wait, then pay a bill. But what if you don’t have the time, energy, or budget for that? We’re bringing brunch to you with one of our Mexican-inspired favorites: Chilaquiles.

The delicious one-pan breakfast is defined by tortilla pieces simmered in tomato sauce and topped with eggs, which are often scrambled, but we’re going to make it super easy for you to make chilaquiles at home with a few Brandless products and shortcuts, like using chips instead of tortillas you’d have to cut up, baking the eggs so you can use one pan, and using salsa as your base, which gives you all the flavor you need. Enjoy!

Oven-safe skillet (If you don’t have an oven-safe skillet, you can use a skillet, then transfer to a baking dish prior to putting the recipe in the oven).

Instructions
  1. Preheat oven to 350 degrees.
  2. Place salsa and water in an oven-safe skillet and cooking over medium heat; turn down and let simmer for 3-5 minutes.
  3. Add black beans and let cook for 5 more minutes. Add salt and pepper to taste.
  4. Add the whole tortilla chips to the skillet, coating the pieces in the sauce. (If you’re switching to a baking dish, transfer the chips and sauce now.)
  5. Crack 4 eggs over mixture, spacing them out.
  6. Bake for 20 - 25 minutes. The eggs will look runny but will be set.
  7. Sprinkle cotija or feta cheese over dish before serving.
