End of Summer Thrill: Pizza on the Grill

The grill pizza tray is here! Gluten free pizza crust mix comes together quickly with water and a little olive oil and grilled to crispy perfection. Pizza crusts get layered with quick and flavorful tomato sauce and grilled wild mushrooms, red onions, radicchio, and arugula. A drizzle of garlic oil and a sprinkle of freshly grated parmesan cheese: pizza night just got a whole lot better.


Servings: 2 (12-inch) pizzas

Prep Time: 15 minutes

Cook Time: 40 minutes 

Ingredients: For the tomato sauce: 2 tablespoons Brandless olive oil 2 cloves garlic, minced 1 can Brandless tomato sauce 1 teaspoon Brandless dried basil 1⁄4 teaspoon Brandless sea salt 1⁄4 teaspoon Brandless red pepper flakes, (plus more for serving). 

For the gluten free pizza crust: 1 package Brandless GF Pizza Crust 2 teaspoons Brandless olive oil, divided 1 1⁄2 cups water, divided.

For the toppings: 8 ounces of wild mushrooms (oyster, baby shiitake, etc) 1 small red onion, thinly sliced Brandless olive oil Brandless salt and pepper to taste 2 teaspoons Brandless thyme 1 small head radicchio, thinly sliced 2 large handfuls wild baby arugula, plus more fresh for garnish. 

For Serving, optional: Freshly grated parmesan Brandless organic garlic flavored extra virgin olive oil 

Special equipment needed: Gas or charcoal grill Brandless 12 “ pizza grill tray Brandless 9×13 grill tray Brandless tongs Brandless pizza wheel Small sauce pot.

Instructions: For tomato sauce: 

  1. Heat olive oil over medium heat in a small sauce pot. Add garlic and sauté until fragrant and golden, about 1 minute. 2. Add in tomato sauce, dried basil, salt, and red pepper flakes. Simmer until flavors come together, about 5 to 7 minutes. Set aside and keep warm. 


*Note: You will only use about ~3 tablespoons of pizza sauce per pie, so there will be leftovers – a great excuse for another pizza night.

For Gluten Free Pizza Crust: Makes 2 (12-inch) pizza crusts For 1 pizza crust, you will need: 1 cup Brandless gluten free pizza crust mix 

3⁄4 cup water 1 teaspoon Brandless olive oil 

  1. Preheat gas grill to high*. Line Brandless 12 “ pizza grill pan with parchment. Working in batches, make one 

pizza crust mix at a time. Combine pizza mix, water, and oil in a mixing bowl. With electric mixer (or a whisk), beat for 3 minutes on medium speed. Spread mixture on prepared pizza pan. 2. Place pizza pan on grill and close lid; cook for 15 minutes; carefully, remove parchment paper, and flip the crust 

to cook and crisp the other side, about 5 minutes. Repeat with remaining crust mix. 

*Note: Alternatively, if using oven, preheat to 450 degrees F. Line two baking sheets with parchment paper. Working in batches, make one pizza crust mix at a time. Combine pizza mix, water, and oil in a mixing bowl. With electric mixer (or a whisk), beat for 3 minutes on medium speed. Spread mixture on prepared pan to at least 12 inches wide and 1⁄4 inch thick. Repeat with remaining mix. Bake 15-20 minutes or until crust is slightly golden. Add sauce and toppings and bake for 10-15 minutes more until crisp and golden brown.

For the topping*: 

  1. While crust is cooking, preheat your Brandless 9×13 grill tray. Toss mushrooms and sliced onions with olive oil, 

salt, pepper, and thyme in a small bowl. 2. Transfer directly to grill tray. Cook, tossing occasionally, for 8 to 10 minutes, until veggies are tender and slightly 

charred. Add sliced radicchio and handfuls of arugula to grill tray and toss with mushrooms and onions. Cook until just wilted, about 2 minutes. Carefully remove from grill. 

*Note: Alternatively, sauté veggies in a cast iron skillet over medium-high heat. Cook mushrooms and onions for 6 to 8 minutes until lightly browned and softened. Add radicchio and arugula and cook until just wilted, 1 to 2 minutes. 


To assemble pizza: Spoon warm tomato sauce onto center of pizza; spread to inner edge of crust. Sprinkle freshly grated parmesan over each pizza. Layer each pizza with the grilled radicchio, arugula, red onions, and mushrooms. Grill pizzas for 5 to 10 more minutes until toppings are warmed through and crust is crisp and golden. Sprinkle with more parmesan cheese, red pepper flakes, and oregano, if desired. Arrange some more fresh arugula on top and drizzle with Brandless garlic infused olive oil.
