This quick, cozy dish is ideal when you don’t have time to wait for take-out. If you’re looking for a more substantial meal, mix in cubes of tofu, add stir-fried vegetables, or top it with a fried egg. But it makes a crave-able light lunch or simple side dish exactly as it is.
- Bring water to a boil in a large pot, and salt the water (roughly half a tablespoon of salt per quart of water is a good rule of thumb). Add spaghetti and cook uncovered for 7 minutes (or until as tender as you like it), and drain.
- Mix the cooked spaghetti with the Thai peanut sauce, and toss until the noodles are well-coated.
- Plate, and top with the chopped scallions. For a little more kick, give it a squeeze of lime and sprinkle hot red pepper flakes to taste. Serve hot or at room temperature.
